CHEESE DUMPLINGS FROM ROMANIA

CHEESE DUMPLINGS (PAPANASHI)

INGREDIENTS:

- 300 g fresh cottage cheese (cream cheese)

- 2 eggs

- a pinch of salt

- a pinch of baking powder

- 10-12 spoons of flour

- 2 teaspoons of vanilla sugar


Put everything in a bowl and mix with a pastry blender or with a spoon until the composition is no longer sticky. (you can clean it off your fingers easily). Add a little flour if it’s necessary, but not too much.




Take pieces of this dough, with your hands wet, form round dumplings and roll them through flour. Flat them and make with the finger a little hole in the middle. Make an equal number of bigger balls (with holes in them) and smaller balls, which come on top.

Put them to fry in a pan with boiling oil (the oil should cover the dough balls). When they rise to the surface, take them with a spoon and drain them well. Cover them so that they don’t have a hard crust.


Put cream and jam on them and then add the small ball on top.

We tried this at school today during our Comenius/ international exhibition (well some of us did). It was a bit of a surprise to find that the dough part wasn't sweet as we were expecting it to be like a doughnut. A lot of us loved it, but others thought they might be an aquired taste. :o)
